Analyze Table is for faster sorting and will adjust the execution plan according to your query requirement choosing the shortest and cheapest plan.
Optmize tables will re-org the table data by adjusting the empty segments or space in between to give faster query run time.
Both are necessary to be run to increase performance of the database queries and application access.
