What is bromelain？

Bromelain is a protease extracted from the skin and stem of pineapple. Pineapple protease belongs to the papaya enzyme family and is classified into stem pineapple protease (EC3 - 4 - 22 - 32) and fruit bromelain (EC3 - 4 - 22 - 33) depending on the isolation and extraction site. - The molecular weights of these two enzymes are 33 kDa and 28 kDa, and their isoelectric points are 9.5 and 4.6, respectively. Bromelain has a wide range of applications in the pharmaceutical and food industries. In the pharmaceutical field, bromelain is used for the removal of necrotic tissue from ulcers and burns because of its antithrombotic, antiedema and anti-inflammatory effects. In the food industry, pineapple protease is widely used for meat tenderization, beer clarification, dry cool production and protein hydrolysis.
